Chicken, Tomato & Spinach Medley

Simple, colorful, delicious and healthy!

Ingredients:

  • Extra Virgin Olive Oil
  • Garlic
  • Chicken Breast (Cut into bite size pieces)
  • Canned Tomatoes (Hunts Diced Tomatoes)
  • Spinach
  • Salt
  • Pepper
  • Oregano

1) Saute garlic in olive oil. After a few minutes, add the chicken and tomatoes. I like using canned tomatoes for most of my dishes because I prefer their color, flavor and regularity in size compared to regular tomatoes. Let it simmer until chicken is cooked. Flavor with salt, pepper & oregano.

2) Add the spinach. I don’t like overcooking my vegetables so as soon they’ve already shrunk because of the heat, simply stir a little then serve. This keeps the spinach’s natural greeness, sweetness & crisp.

Asparagus & Mushroom Omelette

When you’re doing the Southbeach Diet, you’re encouraged to eat a lot of protein — specifically eggs in the morning. I’ve tried a variety of omelettes already and basically they’re comprised of the following ingredients:

Canola Oil + Veggies + Eggs + Cheese + Salt + Pepper + Cheese = BOOM!

*** Canola oil & Extra Virgin Olive Oil are both considered healthy. I use them all the time… Canola for sautéing & frying, EVOO for salads and lighter dishes.

For this recipe, I used Asparagus & Mushrooms. All you have to do is mix and match vegetables… And prepare yourself for a big, healthy, satisfying breakfast.

Ingredients:

  • Canola Oil
  • Onions
  • Canned Mushrooms
  • Asparagus
  • 2 Eggs
  • Quick Melt Cheese
  • Salt
  • Pepper
  • Chili Powder (I put chili powder on almost everything…)

1) Saute onions in canola oil. Add mushrooms & asparagus. Saute some more… (And sing a song while you’re at it)

2) Beat eggs. Slice cheese into small squares and add to egg mixture. Add a little water to make omelette fluffier.

3) Add salt, pepper, chili powder… Cook till eggs aren’t watery anymore then serve!

I’ve yet to buy a nice non stick pan to make for perfect folds. I aways tend to mess it up! Haha, for now, this will do!

Abibay’s Scrumptious Tuna Salad

One of the best Tuna Salads ever!!! Haha, sorry, I could still remember how completely satisfied I was with this very simple yet scrumptious dish. It’s very easy.

Ingredients — I don’t like measuring stuff. Amount depends on your preference and taste. I usually just throw everything in.

  • Extra Virgin Olive Oil
  • Salt
  • Pepper
  • Garlic
  • Onions
  • Calamansi
  • Tomatoes
  • Cucumber
  • Canned Tuna (Century Tuna in Vegetable Oil)
  • Romaine Lettuce
  • Black Olives
  • Capers
  • White Wine Vinegar

1) Prepare salad: Chopped lettuce, tomatoes and cucumber. Put in bowl and set aside. How very basic, right?

2) Sautee garlic and onions in extra virgin olive oil. I sauteed them because as much as I have no qualms about eating raw garlic and onions, we all know how nasty the smell could be after munching on the and you’d rather just keep your mouth shut the whole day than talk to anyone. Brushing your teeth helps but it takes awhile for the smell to completely disappear. Might as well cook it.

2) Drain canned tuna and add to garlic and onions being cooked. Squeeze in one calamansi (to remove and hint of lansa: fish odor in Filipino). Saute just for a little while and add black olives and capers. Very Puttanesca-ish…

3) Put sauteed ingredients on top of salad then add  vinaigrette — mix some olive oil, white wine vinegar, salt & pepper and shake, shake, shake! Ratio is 3:1, okay? 3 parts olive oil, 1 part vinegar.

Look at how pretty your food is, smile, Instagram it… Pray… Then dig in! Haha, two thumbs up!

I Love Cooking! And Eating Of Course…

I have always been a foodie… That explains why I used to weigh 200 pounds! Haha, I love eating and just recently, have discovered a new found love for cooking!

I decided to start a cooking blog because since I began doing the South Beach Diet a month ago, I began to REALLY enjoy cooking my own food. I’m also an Instagram addict so I post food photos all the time… Hipstamatic’s Loftus Lens make my dishes look oh so perfect!

Because people have been asking me to post recipes of my cooking, why not just post them here, right? I also wanna keep track of my recipes cause sometimes I end up forgetting them.
